Quick Greek Chicken Sandwiches and Tzatziki Sauce Recipe. Watch the video recipe at the bottom of the page, bellow the written recipe:
1. For tzatziki sauce, it is necessary to peel a fresh cucumber. Grate, salt and stir and leave to stand at room temperature for up to 10 minutes.
2. After that, drain the cucumbers well so that all the liquid comes out, then shake them out in a separate bowl. Discard the water released by the cucumbers; you will no longer need it.
3. Now add chopped garlic, extra virgin olive oil, dill, pepper, and Greek yogurt to the cucumbers and mix well.
4. Store in the refrigerator covered until use.
5. Now prepare quick Greek pastries. In one bowl, combine the dry ingredients, i.e., smooth flour, salt, and baking powder.
6. Melt the butter in a pot on olive oil, and as soon as it melts, remove from the heat.
7. Add Greek yogurt, a little cold water, and mix well, then add to the previous mixture with flour and knead a dough ball.
8. Divide the dough immediately into 16 equal balls. Each ball weighs about 55 grams.
9. Arrange the shaped balls on a previously oiled sheet, then coat with whisked egg and sprinkle with seeds. I used chia seeds, but you can, of course, use any other, sesame, flax and similar
10. No need to wait for it to rise, put these quick pastries right in the oven.
11. Greek instant pastries are baked for about 18-20 minutes without a fan at 200 C.
12. After the pastries have turned golden yellow, take them out and leave to cool for about twenty minutes.
13. While the pastries are cooling, prepare the chicken. This is actually a recipe and a trick on how to fry chicken quickly. You can also use turkey, of course.
14. Cut the meat into medium-sized pieces. Add salt and pepper, add flour, and stir. Whisk the eggs well and pour over the chicken or turkey and mix well. Roll individually in bread crumbs/pretzels to which you can optionally add a little sesame.
15. Fry for a few minutes in deep fat and briefly leave on the napkin to drain.
16. Now the pastries have cooled. Cut in half and put a small teaspoon of tzatziki sauce, then breaded meat, again a little sauce and then arrange the lettuce on the top. Put a slice of tomato/feta over the salad and cover with pastry and fasten everything with a toothpick.
17. Stick an olive on the top of a toothpick, and quick Greek sandwiches with chicken and tzatziki sauce are done and ready to serve.
