1. Slice onion, paprika, carrot, garlic, root vegetables (celery, parsley) and add bay leaf, and on the side in a separate bowl peel the tomato and cut into smaller cubes.
2. Fry everything except the tomatoes for 10 minutes with the addition of a little hotness if desired. Now add the sweet paprika and tomato and mix for another minute. Add canned beans, optionally Mexican vegetable mix, a little salt, pepper, spice mixture. Stir for a few minutes, then pour in 2.5 dl of water and leave for 10 minutes to cook, stirring occasionally.
3. Put baked beans in a baking dish and immediately put in the oven to bake for 45 minutes at 200 C.
4. Take the frozen headless red rockfish out to room temperature and let it stand for 20 minutes, just to loosen the skin a bit and mist up.
5. Meanwhile, prepare the chard with the potatoes. Cook salted and peppered potatoes with 4 dl of water for 10 minutes, then set aside. Now take a pan and fry the garlic very briefly for a few seconds and immediately add the chard. I used frozen chard. Melt and simmer for a few minutes. Now add the pre-cooked potatoes along with the liquid. Add a little mixture of spices or salt, nutmeg, and pepper. Cook to the desired density. You can remove it from the fire earlier and finish it later so that everything is warm on the table.
6. Now the rockfish is a bit “dewy,” and the skin has softened. How to clean and peel a red rockfish? It’s straightforward. It is clearly shown in the video. Under a stream of cold water, cut the upper and lower spines from the tail towards the head. Now just peel both sides of the skin in one piece, it goes without any problems. Cut off the bottom and wash the black part on the upper part of the abdomen.
7. You can put the red rockfish in the freezer and use it for another lunch. Then you won’t have much to do around it because you’ve done most of the work and already cleaned the fish.
8. If you are going to prepare it right away, the recipe is the same. Just don’t let it melt. Rub the salt and immediately roll it well into the smooth flour.
9. Fry the fish at a medium oil temperature for a total of 25 minutes with approximately five turns. It does not absorb oil, be sure that not a drop of oil will remain in the meat. That’s why you need to put a lot of oil so that it would not be lacking.
10. Take the fish out on a napkin, drain only briefly, and everything is ready to serve. Reheat the chard with the potatoes you removed from the heat halfway through cooking and finish it to the end, just like I showed in the video recipe. Remove the baked beans from the oven.
