1. Cut the meat and salt on both sides. Leave it to stand at room temperature until the vegetables are sliced.

2. Grate carrots and root vegetables (celery and parsley), chop onions, garlic, and fresh sweet peppers and put it together into a big bowl. Add some spiciness if you have (and it would be a wise choice) like hot peppers, add bay leaf, a sprig of rosemary and thyme.

3. Heat a pot or a larger pan, add oil and all the vegetables, and simmer for 15 minutes until it becomes golden yellow. Allow the vegetables to fry well because the stew will be far tastier.

4. Now water three times with 3 dl of water for the next 45 minutes (meaning every 15 minutes) to soften the vegetables well.

5. TIP: You can add the same amount of water again, to soften it, you won’t do anything wrong – on the contrary.

6. Now roll only one side of the meat into smooth flour and spread over the vegetables on the side where there is no flour.

7. By moving the pan and stirring very gently, simmer covered for a few minutes to let the meat release the liquid and only then turn to the other side.

8. When the liquid has been reduced, immediately prepare a total of 1.2 liters of liquid to soak. Add 2 dl of hot water or stock or at least unsalted beef and vegetable soup (so that the meat doesn’t stick to the bottom).

9. TIP: I always have frozen unsalted soup to add to various dishes, risottos, stews, and similar, but you can also use hot water to drizzle. The taste is far better with broth.

10. After that, immediately add a pinch of cumin, pepper, and dried cranberries and continue to cook for the next 45 minutes (every 10 minutes add 2 dl) until you use up the broth. Occasionally turn the meat and stir to keep it from burning.

11. After you have cooked it for 45 minutes, add the sweet paprika and stir for a few minutes.

12. Drizzle with 3 dl of red wine or water. I definitely recommend the wine. Don’t worry, the alcohol evaporates.

13. Stir briefly, then add the chopped parsley leaves and cook for another 7-8 minutes.

14. Family stew for more people is done and ready to serve with a side dish of your choice. It can be dough, rice, potatoes, and the like.
